My Grandmother’s Pumpkin Bread Recipe

PUMPKIN BREAD – Makes 2 loaves

3 cups sugar                                                3½ cups flour

1 cup oil                                                        2 tsp. baking soda

4 eggs, beaten lightly                                  2 tsp. salt

1 can pumpkin (16 oz.)                               1 tsp. baking powder

– – – – – – – – – – – – – –                                      1 tsp. nutmeg

2/3 cup water                                               1 tsp. allspice

1 tsp. cinnamon

½ tsp. ground cloves

Grease 2 loaf pans, or spray with non-stick spray.  Preheat oven to 350 degrees.

Cream together sugar and oil.  Add eggs and pumpkin; mix well.  Sift together flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon and cloves.

Add dry ingredients to pumpkin mixture alternately with water, beginning and ending with flour mixture.  Mix just until blended.  Pour half of mixture into each prepared pan.

Bake 45 minutes, then cover with a foil tent (to prevent overbrowning) and bake 25 minutes more.  Test with a toothpick stuck in the middle of the loaf.  Bread is done when the toothpick comes out clean.  Let stand about 15 minutes and then turn out of the pan onto a rack to cool.
